Mom's Apple Pie
When I was growing up in Daytona Beach, Florida in the 1950's, there was a restaurant, the Banyan Tree, which had the most amazing apple pie. Each slice was served with a small container of honey-apple nectar on the side to pour over the slice. This is an ad-hoc recipe that is based on that apple pie.
Ingredients:
7-8 medium apples, peeled and sliced thin
2 piecrusts, home-made or store bought
1 tsp cinnamon
1/2 tsp cloves
1 tsp allspice
1/4 tsp nutmeg
2 tbsp cornstarch
1/3 cup sugar
3-4 tbsp of margarine
2-3 tbsp honey
Preheat oven to 400 degrees F.
Soften apple slices in a microwave safe bowl or dish by heating in the microwave on Hi for 6-7 minutes.
In a large bowl, gently mix softened apple slices with spices, cornstarch, and sugar.
Rub about 2 tsp of flour over bottom of a glass or ceramic pie dish to keep crust from sticking to dish, arrange bottom crust in dish.
Pour apple mixture into piecrust, mounding up in the middle of the dish.
Drizzle honey over surface of apples, and dot with margarine.
Arrange top crust over apples, stretching crust to cover and meet the bottom crust. Pinch edges of top and bottom crust together all around the pie. Cut 3-4 two-inch slits in crust to let steam escape.
Line a roasting pan with aluminum foil (this is important as the pie will drip!), place the pie in the roasting pan, and put in oven.
Bake for 50-60 minutes at 400 degrees F, until crust is browned. Cool to room temperature (I put the pie in the garage to cool faster) before serving.
