Molasses Ginger Crackles
Recipe adapted from one found on the internet, makes about 3 dozen cookies.
Ingredients:
1/2 stick of margarine, e.g. I Can't Believe It's Not Butter
1/2 cup plus 1/3 cup of sugar (not sugar substitute, it has to be real sugar)
1 large egg
1/4 cup of dark molasses
2 cups unbleached flour
2 tsp baking soda
1 tsp ground cinnamon
1/4 tsp ground cloves
2 tsp ground ginger
1/4 tsp salt
Soften margarine slightly, e.g. in the microwave on low power for 15 sec to make it easier to beat.
Beat margarine and 1/2 cup sugar together, add egg and molasses, mix well.
Add flour, spices, salt, and baking powder, mix well.
Chill the dough in the refrigerator for 30 - 60 minutes.
Preheat oven to 375 oF.
Line 2 baking sheets with parchment paper.
Put the remaining sugar in a small bowl. Roll the dough into one-inch balls and roll in the sugar. Put each ball about 1 1/2 inches apart on the baking sheet and flatten slightly with a fork.
Bake for about 8-10 minutes, until the cookies crackle on top. Cool on a wire rack.
