Dark Chocolate Mint Chip Cookies
I first tasted these at a Corvallis Audubon Society meeting, and then got the recipe (named 'Polka Dot Cookies'for some reason) from a bag of green mint chips. About 4 dozen cookies.
Ingredients:
2 cups (1 bag) of semisweet chocolate chips
1 stick of margarine, e.g. I Can't Believe It's Not Butter (1/2 cup)
1/2 cup sugar
3 large eggs
2 tsp vanilla extract
1 cup of green mint chips (can be hard to find, but these are sold in some stores)
2 cups unbleached flour
1 tsp baking soda
1/8 tsp salt
Steps:
Preheat oven to 350 oF.
Put margarine and chocolate chips into a microwave safe bowl. Heat at medium power (around 4 or 5) for 2 minutes. Take out and stir. If the chips have not sufficiently melted, put the bowl back in the microwave for another 30-60 seconds on medium power.
Stir heated chips and margarine and scrape into a larger bowl. Add sugar, eggs, and vanilla extract and mix well.
Add 1 cup of green mint chips and mix into wet ingredients.
Add flour, salt, and baking powder, mix well with wet ingredients.
Line 2 baking sheets with parchment paper.
Drop cookies by well-rounded spoonfuls, about 1 1/2 inches apart on the baking sheet.
Bake in oven for about 10 - 12 minutes. Cool on a wire rack.
