Easy Cauliflower Casserole


Here is a quick and easy way to prepare this healthy vegetable. It's something I made up on the spur of the moment.

Ingredients:

1 head cauliflower, about 1 to 1 1/2 pound or so. White is the standard variety, but you can use orange or purple cauliflower for a change.

1/2 cup of water

breadcrumbs and parmesan cheese for topping

Need: microwave, oven broiler

  1. Wash intact head of cauliflower, inspecting for any brownish discolored spots; trim these off. Then cut leaves off of base of the cauliflower, and cut the head into two pieces.

  2. Cut the stem base from the flowerets, and cut the flowerets into bite-sized pieces. Put the cauliflower flowerets into a 2 quart casserole dish with a lid.

  3. Add 1/2 cup water to the casserole dish, put on the lid, and microwave on HI for about 10 minutes, until cauliflower pieces can be pierced with a fork.

  4. Turn oven broiler on medium high.

  5. Remove casserole lid, gently tilt dish to drain out any remaining water, and sprinkle breadcrumbs and Parmesan cheese over the flowerets.

  6. Broil for several minutes, watching carefully, until the breadcrumbs are lightly browned.

  7. Remove from oven (turn off broiler!) and serve. Also good cold the next day.
