Braised Red Cabbage with Apple and Onion

This colorful sweet-sour dish is a healthy side for chicken or beef meals. Good hot or served cold the next day.
Ingredients:
1 tablespoon canola or olive oil
1/2 medium onion, sliced into slivers
1 medium Gala or Fuji apple, peeled, cored and sliced thin
1/2 red cabbage, cored and coarsely shredded
1/3 cup water
2-3 tablespoons apple cider vinegar
! tablespoon sugar
Salt and pepper to taste
1) Heat oil in a heavy pot with lid over medium high heat. Add sliced onion and apple and cook, stirring, 4-6 minutes until onion softens.
2) Add shredded cabbage, water, cider vinegar and sugar. Bring to a boil, stir, and reduce heat to a simmer.
3) Cover pot wirh lid and continue cooking until cabbage is tender, about 20 to 25 minutes. Add a bit more water during the cooking if needed.
4) Season lightly with salt and pepper before serving.
