Peas 'n Carrots


Peas and carrots are an easy vegetable dish that even most vegetable haters will enjoy. Although you can buy packaged frozen mixed peas and carrots, I like to pre-cook fresh, diced carrots in the microwave oven, and then add frozen peas for a final heating. Canned peas and carrots have added salt.

Ingredients:

1-2 cups frozen green peas

2-3 carrots, washed and peeled

  • Chop peeled carrots into small pieces, about 1/3 inch cubes, put in a microwave dish with 1/3 cup of water, cover and cook in microwave on HI for 3-4 minutes

  • Add frozen peas to microwave dish with carrots, mix, cover and and cook on HI for another 6-7 minutes. Usually all of the water will be absorbed by the end of cooking.

Note: I have found that frozen peas foam up when cooked in a microwave oven, and the foam can spill out of the covered dish. I usually put a paper towel under the microwave dish to absorb any spillover foam.
