Microwaved Winter Squash

Winter squash is a healthy, easy vegetable to make. We like sweet delicata squash.
Ingredients:
1 1/2 to 2 pounds winter squash such as delicata or sweet dumpling squash
2-3 tsp margarine cinnamon and nutmeg
Wash squash, put in large microwave casserole dish, and microwave whole squash on Hi for about 1 minute to soften for easy cutting.
Remove from microwave; using a large kitchen knife, cut squash in half lengthwise from stem end to top end, removing stem.
Use a spoon (I use a grapefruit spoon with serrated edges) to scoop out seeds from the cavity, discard the seeds.
If the squash is long, cut each half in two; lay squash pieces cut side up in microwave dish.
Microwave squash in dish uncovered on HI for about 8 minutes, until squash flesh is soft and easily pierced with a fork
Put about 1/2 to 1 tsp of margarine in the cavity of each piece of squash, sprinkle lightly with cinnamon and nutmeg, and cook in microwave on Hi for another 2 minutes, until margarine is melted. Serve immediately.
