Garlic Mashed Potatoes

We love garlic, and garlicky mashed potatoes are a classic side dish.

Ingredients:

2 pounds of yellow potatoes (Yukon Gold is good)

4-6 (or more to taste) cloves of garlic milk, margarine or butter, salt and pepper

  • Wash and peel potatoes, cut into large chunks

  • Peel garlic cloves (heat about 12 min on HI in microwave to loosen skins for easy peeling)

  • Put potato chunks and garlic cloves in a pot and cover with water, cover pot and bring to boil and then lower to simmer.

  • Cook potatoes until easily pierced with a fork; the garlic cloves will be done then also.

  • Drain water off potatoes and garlic, use a potato masher or ricer to mash potatoes and garlic together

  • Add 2 tbsp of margarine or butter and stir into potatoes

  • Add about 1/2 cup milk (low-fat or regular), and salt and pepper to taste, mix into potatoes until creamy.

Serves 4
