Oven Fried Halibut

This is another easy fish entrée from the cookbook: SEAFOOD: A Collection of Heart Healthy Recipes by Janis Harisla and Evie Hansen, sold at the Oregon Aquarium in Newport, OR. It is simple, delicious, and lower in fat than traditional fried fish.

Ingredients:

1.5 pounds of halibut fillets or steaks (can substitute other firm white fish such as rockfish or sea bass)

1 tbsp canola oil

2 tbsp margarine

1 tbsp of lemon juice, preferably fresh squeezed

2/3 cups of dried bread crumbs, unflavored or Italian herb

1/2 tsp each paprika, black pepper, and garlic powder (or more to taste

  • Preheat oven to 450 oF

  • Lightly oil a metal or glass baking dish with canola oil

  • Melt margarine in a microwave safe container large enough to lay one fish fillet or steak in at low heat (e.g. 45 seconds at medium low power) in a microwave, then add the lemon juice to the melted margarine

  • In a separate container, large enough to lay one fish fillet or steak in, mix bread crumbs and spices

  • One at a time, dip the fish pieces in the margarine and lemon juice mixture, and then in the bread crumb mixture, coating both sides well,

  • Place the coated fish in the oiled baking dish. Bake, uncovered, for about 20 minutes at 450 oF, until fish flakes easily with a fork.
