Basil Baked Cod
Taken from a cookbook: SEAFOOD: A Collection of Heart Healthy Recipes by Janis Harisla and Evie Hansen, sold at the Oregon Aquarium in Newport, OR.
Ingredients:
1.5 pounds of fresh cod or lingcod fillets (can substitute other firm white fish such as rockfish or sea bass)
1 tbsp canola oil
2 tbsp margarine
1 tbsp of lemon juice, preferably fresh squeezed
1-2 tsp each of garlic powder and dried basil leaves
Preheat oven to 400 oF
Lightly oil a metal or glass baking pan with canola oil
Melt margarine in a microwave safe bowl or cup at low heat (e.g. 45 seconds at medium low power) in a microwave, then add the lemon juice to the melted margarine.
Lay the cod or other fish pieces in the oiled pan, pour the melted margarine and lemon juice evenly over the fish, sprinkle with garlic powder and dried basil leaves.
Bake, uncovered, for about 20 minutes at 400 oF, until fish flakes easily with a fork.
