Basil Baked Cod

Taken from a cookbook: SEAFOOD: A Collection of Heart Healthy Recipes by Janis Harisla and Evie Hansen, sold at the Oregon Aquarium in Newport, OR.

Ingredients:

1.5 pounds of fresh cod or lingcod fillets (can substitute other firm white fish such as rockfish or sea bass)

1 tbsp canola oil

2 tbsp margarine

1 tbsp of lemon juice, preferably fresh squeezed

1-2 tsp each of garlic powder and dried basil leaves

  • Preheat oven to 400 oF

  • Lightly oil a metal or glass baking pan with canola oil

  • Melt margarine in a microwave safe bowl or cup at low heat (e.g. 45 seconds at medium low power) in a microwave, then add the lemon juice to the melted margarine.

  • Lay the cod or other fish pieces in the oiled pan, pour the melted margarine and lemon juice evenly over the fish, sprinkle with garlic powder and dried basil leaves.

  • Bake, uncovered, for about 20 minutes at 400 oF, until fish flakes easily with a fork.

Serves 4
