Vegetarian Chopped Liver

This is a good substitute for traditional chopped liver. The lentils provide healthy fiber and the olive oil and walnuts healthy fats.
Ingredients:
1 cup dry regular (brown) lentils
1/2 cup walnut pieces
2 medium onions, peeled and chopped fine
2-3 garlic cloves, peeled and chopped fine
1/4 cup olive oil
3 hardboiled eggs, peeled (can discard one of the egg yolks (we give the extra yolk to our dog)
¼ tsp salt
Simmer lentils and walnuts in a pot with 2 cups of water until lentils are soft but not mushy, about 15 minutes
While lentils and walnuts are cooking, saute chopped onions and garlic in olive oil in a pan until onions are soft and start to brown
Drain water from walnuts and lentils, add hardboiled eggs and sauted onions and garlic and mash together well with a potato masher
Refrigerate until served
