Fattoush or Peasant Salad

A typical Lebanese salad. It can be served with grated cheese sprinkled on top. Makes about 3 servings.

Salad Ingredients:

2 cups shredded lettuce (romaine or other green leaf lettuce)

1 large cucumber, diced fine

2 medium tomatoes, chopped fine

1/2 cup chopped parsley, leaves only, no stems

1/4 cup chopped mint leaves, no stems

1/2 to 1 green pepper, diced fine

3 green onions, finely sliced

1 whole pita bread toasted until golden brown and broken into pieces

the size of a quarter

1-2 oz of grated cheddar or jack cheese (optional)

Dressing Ingredients:

1/4 cup lemon juice

1/4 cup olive oil

2 to 4 cloves garlic, minced

1/4 teaspoon salt

Pinch of pepper

1) In a small bowl mix all dressing ingredients well.

2) Put all salad ingredients into a large bowl and toss with the dressing, top with

grated cheese if desired. Serve immediately.

Per servings (without added cheese): 274 calories, 5 g protein, 19 g fat (from the olive oil), 325 mg sodium (from the pita bread and salt), 4 g fiber, 6 g sugar
