Carrot Slaw
Who doesn't like carrot slaw? Traditionally made with dark raisins, you can add pineapple chunks, dried cranberries, or golden raisins (which I like best) instead. A food processor makes grating the carrots easy. I have adapted a basic recipe by using part low-fat yogurt and less mayonnaise to reduce calories. On the west coast, the Hellman's label is Best Mayonnaise. Barry kept complaining that we couldn't get Hellman's in Oregon, until I showed him the fine print on the Best mayo label: HELLMAN'S EAST OF THE ROCKIES.
Ingredients:
4-5 carrots (enough to make about 2 1/2 cups of grated carrots)
1/3 cup raisins, plumped in a little water in the microwave. about 1 minute on HI
1/4 cup non-fat yogurt
1/4 cup regular mayonnaise (Hellman's/Best)
1 tbsp fresh lemon juice (optional)
1-3 tbsp of sugar, depending on sweetness desired
¼ tsp salt
Cut ends off of carrots, peel, and cut in chunks for the food processor.
Using the grater plate on a food processor, grate carrots into fine pieces
Soften raisins (dark or golden) by heating in a bowl with a little water for about 40 sec on Hi in the microwave
Put grated carrots and softened raisins in a bowl, add other ingredients, mix well
Refrigerate until served
