Antipasto Salad

This luscious salad is easy to throw together if you have jars of roasted red peppers, artichoke hearts, pepperoncini peppers, and olives in the pantry. This is a hearty winter salad that can serve as a light meal.

Ingredients:

One heart of romaine lettuce, torn into bite-sized pieces, or one package of pre-torn

romaine

1/2 medium sweet yellow or red onion, sliced into thin half rings

about 4 oz of roasted red peppers, cut into bite-sized pieces, from a jar is fine

one 6-oz jar of marinated artichoke hearts with some of the liquid

10 black or green Greek olives, with or without pits

6-8 pepperoncini from a jar

10 cherry tomatoes, halved

2-3 slices of genoa salami, cut into pieces (optional)

Steps:

1) Put torn romaine lettuce into a large bowl

2) Add other ingredients, toss lightly and serve.

Dressing is not needed for this salad as the jarred vegetables add enough oil, vinegar and spices.

2 servings (without the salami): 186 calories, 3 g protein, 7 g fat, 494 mg sodium (from artichoke hearts and olives), 8 g fiber, 8 g sugar
