Sweet Coleslaw
Adapted from a recipe in the Moosewood Cookbook (1977), this looks and tastes like Resers commercial coleslaw, but is lower in fat, sugar and salt.
Ingredients:
1 small or ½ large green cabbage (enough to make about 6-7 cups of grated cabbage)
2 carrots (enough to make about 1 to 1.5 cups of grated carrots)
1/2 yellow onion (enough for about 1 cup of grated onion)
1/4 cup non-fat yogurt
1/3 cup regular mayonnaise (Hellmans/Best)
3 tbsp of apple cider vinegar
1/4 cup white sugar or Splenda (or a mix)
1/2 tsp celery seeds
dash black pepper
1/4 tsp salt
Remove core from cabbage and cut into chunks, cut ends off of carrots, peel, and cut in chunks, cut onion into chunks
Using the grater plate on a food processor, grate cabbage, carrots and onion into fine pieces
Put grated vegetables into a large bowl and add other ingredients, mix well, correct seasonings if needed
Refrigerate until served, good for about a week
7 servings of about 1 cup:
130 calories, 3 g Protein, 7 g Fat, 106 mg Sodium, 4 g Fiber, 11 g sugar
Compared to 1 cup serving of Resers coleslaw:
300 calories, 2 g protein, 16 g fat, 460 mg sodium, 30 g sugar
