Cucumber Radish Salad

From a basic recipe I found on the internet. This is an easy anytime salad that Barry loves.

Ingredients:

Vegetables:

Cucumber - Peeled, raw, 1 large (8-1/4" long)

Radishes - Raw, 6 medium (3/4" to 1" dia)

Onions - Raw, ¼ onion

Dressing:

Lemon juice, 1 fl oz (juice of 1/2 medium lemon)

Olive oil, 1 tablespoon

Apple Cider Vinegar, 2 tablespoon

Sugar - Sugar, 1-2 tablespoons to taste

1 -Thinly slice peeled cucumber, radishes and onion into a medium bowl

2- Add dressing ingredients, mix well

3- Chill in refrigerator for about an hour

Best servied within the first 2 days
